For 280 cals and 42 grams of protein, this MASSIVE AF dessert is insane. base: -225ml egg whites -1/2 tsp cornstarch (or cream of tartar) -dash natural sweetener -1/2 tsp vanilla extract -dash salt filling: -150g non fat greek yogurt -30g light cream cheese -lemon zest (as much as you like, I did around tsp) -squeeze of lemon juice -dash natural sweetener -touch of salt Beat egg whites on high. When they look foamy, add cornstarch and salt. Once stiff peaks form, add vanilla and sweetener (just a few seconds or it’ll deflate) Spread on a parchment lined (quick cooking oil spray) baking pan & 400F for 8-10 mins or lightly golden brown, ill then turn oven off and leave it in there with oven door open for 2 mins (helps it not deflate so much!) Set aside some of the meringue and add to your topping 👌 Mix your topping ingredients then spread on your base. Roll it up and enjoy! Shout out to @MadelaineRascan for the recipe.
